What is Honey?
Honey is a complex mixture of 82,4% natural sugars, 17.1% water, 0.5% minerals, vitamins, pollen and protein. Of honey’s 82.4% natural sugar content, around 70% is made up of fructrose and glucose. Why do bees make honey?
Unlike wasps and bumblebees, honeybees are special in that they do not hibernate over winter but stay active and cluster together to stay warm. This requires a lot of energy, thus food stored from the summer before, honey, comes in handy. The hive only needs 10 – 15kg of honey to survive and average winter, but they are capable of producing much more.
Is honey nutritious?
Honey contains small amount of a wide range of vitamins and minerals (including iron, potassium, zinc, magnesium, niacin and riboflavin), amino acids and antioxidants. Generally the darker the honey the more antioxdants it contains. Raw honey (honey that is not treated) is lower in GI than commercial honey.
Why does honey crystallize?
Due to the fructose and sucrose contents of honey small crystals forms when honey gets cold and starts to “join” together to crystallize. The lighter the honey, the higher the fructose contents therefore the quicker the honey will crystallize. Simply place honey in warm water that is uncomfortable to the hand and crystals will melt and honey will return to its natural liquid state. Putting honey in microwave will only result in high levels of radiation that will kill all the vitamins and minerals.
